What Is Chicken au Poivre?

Chicken au poivre is a French-inspired chicken dish made with tender chicken and plenty of freshly cracked black pepper. It is based on the classic steak au poivre, but uses chicken instead of steak.

The chicken is cooked until golden and flavorful, then served with a creamy pepper sauce made from the flavorful pan juices. The sauce is rich, smooth, and has just the right amount of peppery warmth.

It is a simple way to turn everyday chicken into a comforting, restaurant-style dinner without making the recipe overly complicated.

Why You’ll Love This Chicken au Poivre Recipe

Feels restaurant-worthy: The creamy pepper sauce makes simple chicken feel elegant.

Weeknight-friendly: You don’t need complicated techniques or specialty equipment.

One-skillet cooking: The chicken and sauce are prepared in the same pan.

Big flavor: Freshly cracked pepper gives the dish a warm, aromatic bite.

Flexible sides: Serve it with potatoes, rice, vegetables, or bread.

Great for guests: It looks impressive enough for a dinner party.

Ingredients

Chicken au Poivre Ingredients

For the Chicken

  • 4 boneless, skinless chicken breasts
  • 1½ teaspoons kosher salt
  • 1½ tablespoons coarsely cracked black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, lightly crushed
  • 2 sprigs fresh thyme

For the Pepper Sauce

  • 1 small shallot, finely minced
  • ½ cup chicken broth
  • ½ cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon green peppercorns, lightly crushed or drained if packed in brine
  • 1 tablespoon unsalted butter Salt, to taste
  • 1 tablespoon chopped fresh parsley

How to Make Chicken au Poivre Recipe

1. Prepare the Chicken

Place the chicken breasts between two pieces of parchment paper and gently pound the thicker portions until the pieces are an even thickness.

This helps the chicken cook evenly and prevents the thinner parts from drying out before the center is done.

Pat the chicken dry with paper towels. Season both sides with salt, then press the cracked black pepper onto the surface.

Don’t use finely ground pepper here. Coarsely cracked pepper gives the dish its characteristic texture and flavor.

2. Sear Until Golden

Heat olive oil in a large heavy skillet over medium-high heat.

Add the chicken and let it cook undisturbed for several minutes. You want a deep golden crust before turning it.

Flip the chicken and add the butter, garlic, and thyme to the skillet.

Continue cooking until the chicken is cooked through and reaches 165°F (74°C) in the thickest part.

Transfer the chicken to a plate and loosely cover it with foil.

Don’t wipe out the skillet. Those browned bits are the foundation of the sauce.

3. Build the Sauce

Reduce the heat to medium.

Add the minced shallot to the same skillet and cook for about 1–2 minutes, stirring frequently. It should soften without becoming deeply browned.

If using brandy or cognac, carefully add a small splash and let it simmer until reduced.

Pour in the chicken broth and scrape the bottom of the pan with a wooden spoon. Those caramelized pieces will dissolve into the liquid and add much more flavor.

Let the broth simmer for a few minutes until slightly reduced.

4. Make It Creamy

Lower the heat and stir in the heavy cream, Dijon mustard, Worcestershire sauce, and green peppercorns.

Let the sauce gently simmer until it thickens enough to coat the back of a spoon.

Avoid boiling it aggressively. Gentle heat gives you a smoother sauce and helps prevent the cream from separating.

Taste before adding more salt. The broth, mustard, Worcestershire sauce, and peppercorns already bring plenty of seasoning.

5. Finish the Chicken

Return the chicken and any juices from the plate to the skillet.

Spoon the creamy pepper sauce over the chicken and let everything warm together for another minute or two.

Finish with a tablespoon of butter and fresh parsley.

The butter gives the sauce a smooth, glossy finish.

Chicken au Poivre

Tips for the Best Chicken au Poivre

Use freshly cracked pepper: This makes a noticeable difference. Freshly cracked pepper has a brighter aroma and a more interesting texture than pre-ground pepper.

Don’t overcrowd the skillet: If the chicken pieces are packed together, they will steam instead of sear. Use a large skillet or cook in batches if necessary.

Let the chicken rest: A few minutes of resting allows the juices to settle back into the meat. This makes the chicken noticeably more tender when sliced.

Don’t rush the sauce: The sauce needs time to reduce and concentrate. A few extra minutes can make the difference between a thin sauce and one that beautifully coats the chicken.

Taste at the end: Peppercorns, mustard, broth, and Worcestershire sauce all have strong flavors. Taste the finished sauce before adjusting the seasoning.

What to Serve with Chicken au Poivre

This dish practically begs for something that can soak up the sauce.

Creamy mashed potatoes are an obvious choice. The mild potatoes balance the peppery sauce beautifully.

For something lighter, serve the chicken with roasted green beans, asparagus, broccoli, or Brussels sprouts.

A simple green salad with a sharp vinaigrette also works well because its freshness cuts through the richness of the cream sauce.

If you’re planning a more elaborate meal, start with a crisp salad or light vegetable appetizer, follow with the chicken and potatoes, and finish with a simple fruit dessert. It can easily become part of a relaxed five-course dinner idea without making every course overly complicated.

Variations

Mushroom Chicken au Poivre

Sauté sliced mushrooms after cooking the chicken. Remove them temporarily, prepare the sauce, and return the mushrooms at the end. Their earthy flavor pairs especially well with black pepper.

Chicken With Peppercorn Sauce and Mushrooms

For an even richer version, add a combination of cremini and shiitake mushrooms. Keep the mushrooms nicely browned so they add texture rather than simply disappearing into the sauce.

Herb Chicken au Poivre

Add fresh thyme, rosemary, or parsley to the finished sauce. Herbs brighten the richness while keeping the dish firmly in the classic chicken dinner category.

Lighter Cream Sauce

Use half-and-half instead of heavy cream for a lighter sauce. The finished sauce will be less rich, but still flavorful.

Can You Make It Ahead?

he chicken is best freshly cooked, but some preparation can be done ahead.

You can season and pound the chicken several hours before cooking and keep it refrigerated. You can also chop the shallot and measure the sauce ingredients in advance.

The sauce is best made just before serving because it has the smoothest texture when freshly prepared.

If you have leftovers, refrigerate them in an airtight container and use them within 3 days. Reheat gently over low heat with a small splash of broth or cream to loosen the sauce.
