Ingredients

  • pounds lean ground beef
  • 1 medium yellow onion finely chopped
  • 3 cloves garlic minced
  • 1 medium head green cabbage chopped
  • 1 cup uncooked long-grain white rice
  • 1 can 28 ounces tomato sauce
  • 1 can 14.5 ounces diced tomatoes
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
  • Optional Topping
  • 1 cup shredded cheddar or mozzarella cheese
  • 2 tablespoons chopped fresh parsley
  • Sour cream for serving

Instructions

  • Preheat the oven to 350°F. Lightly grease a 9×13-inch baking dish.
  • Heat olive oil in a large skillet over medium-high heat. Add the ground beef and onion. Cook for 6–8 minutes, breaking up the beef, until browned and the onion is softened. Drain excess grease if needed.
  • Add the minced garlic and cook for 30–60 seconds.
  • Stir in the tomato sauce, diced tomatoes, Worcestershire sauce, paprika, oregano, salt, and black pepper. Simmer for 3–4 minutes.
  • Add the chopped cabbage and toss with the beef mixture. Cook for about 5 minutes, until the cabbage begins to soften.
  • Spread the uncooked rice evenly in the prepared baking dish. Spoon the beef and cabbage mixture over the rice.
  • Pour the beef broth evenly over the casserole and gently mix so the rice is distributed throughout.
  • Cover the baking dish tightly with aluminum foil. Bake for 60 minutes.
  • Check that the rice is tender. If needed, cover and bake for another 10–15 minutes.
  • For a cheesy topping, sprinkle cheese over the casserole and bake uncovered for about 5 minutes, until melted.
  • Let the casserole rest for 5–10 minutes. Garnish with parsley and serve warm.

Notes

  • Chop the cabbage into fairly small pieces so it cooks evenly.
  • Keep the casserole tightly covered while the rice cooks.
  • Cooking time may vary slightly depending on the rice and baking dish.
  • Allowing the casserole to rest before serving helps the rice absorb excess sauce.
  • For a lighter variation, ground turkey can be substituted for ground beef.
