Ingredients

  • 10 large eggs
  • 2 cups milk
  • 6 cups cubed sourdough or whole-grain bread
  • 1 pound breakfast sausage
  • 1 ½ cups shredded cheddar cheese
  • 2 cups fresh spinach
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1 small yellow onion diced
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley chopped

Instructions

  • Lightly grease a 9×13-inch baking dish.
  • Cut the bread into bite-sized cubes and spread them evenly in the dish.
  • Heat olive oil in a skillet over medium heat.
  • Add the sausage and cook until browned and fully cooked.
  • Add onion and bell peppers and cook until softened.
  • Stir in garlic and spinach and cook until the spinach wilts.
  • Whisk eggs, milk, paprika, salt, and black pepper in a large bowl.
  • Spread the sausage and vegetable mixture over the bread.
  • Sprinkle cheddar cheese evenly over the top.
  • Pour the egg mixture over everything.
  • Gently press the bread down so it absorbs the egg mixture.
  • Cover and refrigerate for at least 30 minutes or overnight.
  • Preheat the oven to 350°F (175°C).
  • Bake uncovered for 45–55 minutes, until the center is set and the top is lightly golden.
  • Let rest for 5–10 minutes before slicing.
  • Garnish with fresh parsley and serve warm.

Notes

  • Slightly stale bread works best because it absorbs the egg mixture without becoming soggy.
  • For overnight preparation, cover the assembled casserole tightly and refrigerate.
  • If the top begins browning too quickly, loosely cover it with foil.
  • Let refrigerated casserole sit briefly while the oven preheats.
  • Add extra vegetables for a more vegetable-forward version.
  • Turkey sausage can be substituted for regular breakfast sausage.
  • Leftovers can be refrigerated in an airtight container for up to 3 days.
