Ingredients

  • Ingredients
  • 1 cup old-fashioned rolled oats
  • ½ cup pumpkin puree
  • 1 cup milk or dairy-free milk
  • 2 tablespoons chia seeds
  • 1 –2 tablespoons maple syrup
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional Toppings:
  • Chopped pecans or walnuts
  • Pumpkin seeds
  • Apple slices
  • Banana slices
  • Almond or peanut butter
  • Extra cinnamon
  • Maple syrup

Instructions

  • Combine ingredients: Add the rolled oats, pumpkin puree, milk, chia seeds, maple syrup, pumpkin pie spice, cinnamon, vanilla, and salt to a jar or bowl.
  • Stir well: Mix until everything is evenly combined and the oats are fully coated.
  • Refrigerate: Cover and refrigerate for at least 4 hours, preferably overnight.
  • Check consistency: Stir before serving. If the oats are too thick, add a splash of milk and mix until creamy.
  • Add toppings: Top with nuts, pumpkin seeds, fruit, nut butter, or a drizzle of maple syrup and enjoy.

Notes

  • Milk: Use dairy milk or your favorite plant-based milk.
  • Sweetness: Adjust the maple syrup according to taste.
  • Texture: Add a little extra milk in the morning if you prefer softer, creamier oats.
  • Storage: Keep refrigerated in an airtight container for up to 4 days.
  • No yogurt needed: Pumpkin and chia seeds help create a naturally creamy texture.
