- 2 large boneless skinless chicken breasts
- 1 tablespoon olive oil
- 2 tablespoons butter
- 4 garlic cloves minced
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- ½ cup sun-dried tomatoes chopped
- 2 cups fresh baby spinach
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- Fresh basil or parsley for garnish
Pat the chicken breasts dry with paper towels and season them with salt, black pepper, and Italian seasoning.
