Ingredients

  • For the Chicken
  • 2 pounds boneless skinless chicken breasts
  • 2 packets chicken gravy mix
  • 1 can 10.5 ounces cream of chicken soup
  • cups low-sodium chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • 2 tablespoons unsalted butter
  • Optional
  • ½ cup sour cream for extra creaminess
  • 2 tablespoons chopped fresh parsley

Instructions

  • Lightly grease the inside of the slow cooker with cooking spray or butter.
  • Arrange the chicken breasts in a single layer in the bottom of the crockpot.
  • In a medium bowl, whisk together the chicken gravy mix, cream of chicken soup, chicken broth, garlic powder, onion powder, black pepper, and dried thyme until smooth.
  • Pour the gravy mixture evenly over the chicken.
  • Place the butter on top.
  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is tender and fully cooked.
  • Remove the chicken from the slow cooker and shred it using two forks.
  • Return the shredded chicken to the gravy and stir until well coated.
  • Stir in the sour cream, if using, until smooth and creamy.
  • Garnish with chopped fresh parsley.
  • Serve hot over mashed potatoes, rice, egg noodles, or biscuits.

Notes

  • Chicken thighs can be substituted for extra juicy meat.
  • Don't overcook the chicken to keep it moist and tender.
  • Add sour cream only after cooking to prevent curdling.
  • If the gravy is too thick, stir in a little extra chicken broth.
  • To thicken the gravy further, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir it in during the last 20 minutes of cooking on HIGH.
