Ingredients

  • 1 lb ground beef
  • lbs russet potatoes thinly sliced
  • 1 small yellow onion thinly sliced
  • 2 cloves garlic minced
  • 1 cup shredded cheddar cheese
  • 1 cup beef broth
  • ½ cup sour cream
  • 2 tablespoons butter melted
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh parsley chopped, optional

Instructions

  • Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  • Brown the ground beef and sliced onion in a large skillet over medium heat. Drain excess grease.
  • Add garlic, paprika, garlic powder, salt, black pepper, and Worcestershire sauce. Stir and cook for 1 minute.
  • In a bowl, whisk together the beef broth, sour cream, and melted butter.
  • Arrange half of the sliced potatoes in the baking dish, followed by half of the beef mixture. Repeat with the remaining potatoes and beef.
  • Pour the broth mixture evenly over the casserole.
  • Cover tightly with foil and bake for 45 minutes, or until the potatoes are tender.
  • Remove the foil and sprinkle the cheddar cheese over the top.
  • Bake uncovered for another 10–15 minutes, until the cheese is melted and lightly golden.
  • Let the casserole rest for 5–10 minutes. Garnish with fresh parsley and serve warm.

Notes

  • Slice the potatoes evenly and fairly thin so they cook at the same rate.
  • Yukon Gold potatoes can be used instead of russets.
  • Add mushrooms, bell peppers, peas, or carrots for extra vegetables.
  • For a cheesier casserole, add another ½ cup of shredded cheddar.
  • Drain excess fat from the ground beef before assembling the casserole.
