- 1 tablespoon olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- For the Honey Mustard Sauce
- ⅓ cup Dijon mustard
- ¼ cup honey
- 1 tablespoon mayonnaise
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar
- 2 cloves garlic minced
- ½ teaspoon paprika
- ¼ teaspoon black pepper
- ¼ teaspoon salt
Prepare the chicken: Pat the chicken thighs dry and season both sides with salt, black pepper, garlic powder, and paprika.
Make the sauce: Whisk together Dijon mustard, honey, mayonnaise, olive oil, apple cider vinegar, garlic, paprika, black pepper, and salt until smooth.
Marinate: Place the chicken in a bowl and pour the sauce over it. Toss well to coat. Cover and refrigerate for at least 30 minutes or up to 2 hours.
Preheat oven: Heat oven to 400°F (200°C). Lightly grease a baking dish and arrange the chicken in a single layer.
Bake: Pour the remaining marinade over the chicken and bake for 25–30 minutes, or until the thickest part reaches 165°F (74°C).
Caramelize: Broil for 1–2 minutes at the end for deeper color and caramelized edges. Watch closely because the honey can brown quickly.
Rest and serve: Let the chicken rest for about 5 minutes before serving.
