  • 6 boneless skinless chicken thighs
  • 2 tablespoons olive oil

  • 2 cloves garlic minced

  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon honey optional

Instructions

  • Prepare the chicken: Pat the chicken thighs dry with paper towels and trim any excess fat.
  • Make the marinade: In a bowl, whisk together olive oil, lemon juice, garlic, paprika, garlic powder, onion powder, Italian seasoning, smoked paprika, salt, pepper, and honey if using.
  • Marinate: Add the chicken thighs and toss until evenly coated. Cover and refrigerate for at least 30 minutes, or up to 8 hours.
  • Preheat the grill: Heat the grill to medium-high, approximately 400–425°F (200–220°C). Clean and lightly oil the grates.
  • Grill: Place the chicken thighs on the grill. Cook for about 5–7 minutes per side, depending on thickness.
  • Check for doneness: Cook until the thickest part reaches at least 165°F (74°C).
  • Rest: Transfer the chicken to a plate and let it rest for about 5 minutes before serving.

  • For the juiciest results, don't press down on the chicken while it grills.
  • Boneless thighs cook faster than bone-in thighs, so watch the internal temperature.
