- 1 cup old-fashioned rolled oats
- ½ cup pumpkin puree
- ½ cup creamy almond butter or peanut butter
- ⅓ cup vanilla protein powder
- 2 tablespoons pure maple syrup
- 1 teaspoon pumpkin pie spice
- ½ teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 2 tablespoons chia seeds or ground flaxseed
- 2 –4 tablespoons mini chocolate chips optional
- 1 –2 tablespoons milk of choice as needed
Mix the dry ingredients: Add oats, protein powder, pumpkin pie spice, cinnamon, and chia seeds or ground flaxseed to a large bowl. Stir well.
Add the wet ingredients: Add pumpkin puree, nut butter, maple syrup, and vanilla extract. Mix until everything is thoroughly combined.
Check the consistency: The mixture should be soft and slightly sticky but easy to shape. If it is too dry, add milk 1 tablespoon at a time. If it is too wet, add a little more oats or protein powder.
Add chocolate chips: Fold in the mini chocolate chips if using.
Shape the balls: Scoop about 1 tablespoon of mixture and roll between your palms. Repeat until all the mixture is used. You should get approximately 16 balls.
Chill: Place the protein balls on a parchment-lined plate or tray and refrigerate for at least 30 minutes, or until firm.
Serve: Enjoy chilled or let them sit at room temperature for a few minutes before serving.
