- 2 large English cucumbers or 5–6 Persian cucumbers
- 1 teaspoon salt
- 2 tablespoons rice vinegar
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 –2 teaspoons chili crisp or chili oil
- 1 teaspoon honey or granulated sugar
- 2 cloves garlic finely minced
- 2 tablespoons scallions thinly sliced
- 1 teaspoon sesame seeds
- ½ teaspoon red pepper flakes optional
